First gather all your ingredients.
4 Slices of Bread
3 Whole Eggs
1/2 teaspoon of Vanilla
1 TBS. of Peanut Butter
1 Sliced Banana
In a small container crack all your eggs and mix in the Vanilla and stir. Then lightly sprinkle cinnamon, sugar and nutmeg mixture as seen in the picture. Sprinkle lightly. You don't want a heavy saturation of the spices...Or maybe you do. In my house, we don't. We like it light.
Then make 2 (two) Peanut Butter and Banana Sandwiches. Place a skillet on the stove top and the heat turned to low to slowly melt our butter. Place a tablespoon of butter and continue with your steps.
Then lightly lay each side of the sandwich in the egg mixture. Don't leave it in there too long because that will saturate the sandwich and take it longer to cook once on the stove top. Remember, you want the outside of the sandwich to be lightly toasted and the fragrance of our spices to faintly invigorate our senses. Next, place the egg coated sandwiches in your skillet with melted butter. Increase the heat to medium. Keep a close eye on your sandwiches. You only want to lightly toast. Flip the sandwich over till the other side is cooked.
Once both sides have reached perfection, remove and plate.
I cut up the remainder of the banana to accentuate the flavor of the syrup. Of course I love mine with a little spoon of soft butter.
