Most of the time, when I start cooking it's usually to indulge my husband, Paul's, sweet tooth. This weekend was no different. You have to love my baby, because his sweet tooth can provide a salary for any candy company executive! It's crazy! LoL
So this weekend, he asked for a cake..........No suggestions........No ideas. Just cake. Even though I love to indulge, my decisions usually come from this question. "What ingredients do I already have in my cabinet?" I don't know about you but I HATE going to the store. I hate shopping; meandering through a store with no clue as to what I want or what I'm buying is not my cup of tea! I have a list. I get what I need and I am out of there! So as I am looking through my cabinets, I see a can of pineapple. Problem immediately solved! Pineapple upside down cake it is! Now to find my jar of maraschino cherries! :D
Pineapple Upside Down Cake is the perfect summer cake. Warm decadent rich buttery pineapple and a lightly sweet moist cake topped with a scoop of fresh vanilla ice cream and we're in heaven! As I was mixing my cake batter and getting my bundt pan ready for the crushed pineapple and brown sugar mixture, my grandma's voice rang in my ears.
"Go ahead an take the cake out of the oven."
" But Grandma the timer hadn't gone off yet. " and she replied, "But the pan will still by really hot. Don't worry, it'll continue to cook." I think as a passionate cook, that had to be the most important piece of advice I had ever been given. Even though you take something off the stove top or out of the oven, if you keep it in the pan, it'll continue to cook/ bake. That advice has made some of the best home made cookies, desserts, and dinners in my kitchen.
So as you place your cake in the oven, remember to never walk away from the kitchen and to take them out of the heat 6-7 minutes earlier then instructed. God tells us that to wait on Him! Pursue Him to the end. For HE will not disappoint us. "For the revelation awaits an appointed time; it speaks of the end and will not prove false.Though it linger, wait for it; it[a] will certainly come and will not delay." Habakkuk 2:3
